Definition

Food-borne disease caused by listeria monocytogenes, a gram-positive bacteria transmitted through infected ready-to-eat meat, dairy products, salads, and cook-chill dishes. Its symptoms include dark red rash over legs and trunks, flu-like fever, and lethargy, leading to circulatory collapse and shock. It may also cause meningitis (inflammation of connective brain tissue) and miscarriages. The bacteria is killed at temperatures above 70°C (°F). Named after the Scottish surgeon Dr. Joseph Lister (1827-1912) who pioneered antiseptic surgery in 1867.
